Quick, bright, and cheesy — this Parmesan Lemon Asparagus Skillet is perfect for weeknight meals and pairs well with a wide range of mains.

Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • 1 pound asparagus trimmed
  • Salt and freshly ground black pepper, to taste
  • 2 pinches dried oregano
  • 2 pinches Italian seasoning
  • Juice of 1 lemon, or more to taste
  • 2 tablespoons freshly grated parmesan

Instructions

  • Heat the olive oil in a cast-iron or large skillet over medium-high heat.
  • Add the minced garlic and sauté until fragrant and slightly browned.
  • Add the asparagus, season with salt, pepper, dried oregano, and Italian seasoning. Toss with a spatula to coat evenly.
  • Cook for 5–7 minutes, depending on how tender you prefer the asparagus.
  • Sprinkle the parmesan over the asparagus and cover the skillet with a lid for about 1 minute to melt the cheese.
  • Remove the lid, toss with lemon juice, adjust seasoning if needed, and serve warm.

Notes

  • Snap off the woody ends by bending a stalk; it will break where the tender part begins. Use that piece as a guide to trim the rest if you prefer uniform spears.
  • If you don’t have cast-iron, a large nonstick skillet works fine.
  • Use a wide skillet to avoid overcrowding; too much overlap causes steaming rather than sautéing.
  • Storage: Keep leftovers in an airtight container in the refrigerator for up to 4 days.
  • Reheating: Reheat gently in the oven or microwave until warmed through.
  • Freezing: Place cooled, cooked asparagus in a freezer-safe bag and freeze for 2–3 months. Thaw before reheating.
