Beets become a fun, crunchy snack when transformed into chips—vibrant, flavorful, and something even picky eaters often enjoy. As a registered dietitian and mom of three, I love finding simple ways to serve nutrient-dense foods, and beet chips are an easy win.

After perfecting kale chips in the air fryer, I experimented with beets and was delighted at how quickly and simply they crisp up into a satisfying snack.

What is a Beet Chip?

A beet chip is a thinly sliced beetroot that’s seasoned and crisped until crunchy. Like potato chips, beet slices are sliced thin and finished with a bit of oil and salt, but they offer the distinctive color and flavor of beetroot as well as added nutrients.

Ingredient Notes

One bunch of beets on a linen napkin, oil, and salt.
  • Beets – A nutrient-packed root vegetable (also called beetroot). Their deep color comes from antioxidants and they provide fiber, folate, potassium, magnesium, and vitamin C. Wash and scrub them well before use.
  • Avocado oil or Olive oil – Optional but recommended for flavor and crispiness. Use a light brush or oil mister to add just enough oil so the chips crisp without becoming greasy.
  • Salt – Optional but enhances flavor. Finely granulated salt is best so it doesn’t overpower the beet’s natural sweetness.

  1. Trim the ends and any root strands from each beet.
  2. Slice beets very thin and uniformly using a mandoline (about 2.5 mm for best results).
  3. Arrange slices in a single layer in the air fryer basket.
  4. Optional: lightly brush or mist the slices with oil.
  5. Optional: sprinkle lightly with salt.
  6. Air fry at 300°F for about 8 minutes. If needed, add 1–2 minutes until crisp.
  7. Let cool a couple of minutes before serving so they firm up.

Expert Tips

  • Remove beet greens about an inch above the root if present.
  • Wash and scrub beets thoroughly; peeling is not necessary if cleaned well.
  • Use a mandoline to achieve the thin, uniform 2.5 mm slices that make the best chips.
  • Avoid slicing thinner than 2.5 mm—ultra-thin slices burn more easily.
  • Serve beet chips within 5–10 minutes for best crunch. If they soften, re-crisp in the air fryer for a couple of minutes.
  • Do not use aerosol oil sprays in an air fryer. Use a quality mister or a silicone basting brush instead.
  • Follow your air fryer manufacturer’s instructions and adjust cook times slightly for different models.

Dietitian Tip

Veggie chips are a playful way to introduce vegetables to kids. If a child resists beets, try calling them “veggie chips” or offering a dip like yogurt or hummus to make them more appealing.

Questions You May Have

What is the difference between baked and dehydrated beet chips?

Dehydrated chips have more moisture removed and a longer shelf life; dehydration takes several hours. Baked or air-fried beet chips crisp much faster, usually in minutes.

Are beet chips healthy?

Beets provide vitamins, minerals, fiber, and antioxidants. How “healthy” a food is depends on individual needs, but beet chips retain many of the vegetable’s beneficial nutrients when prepared simply.

Do beets contain nitrates?

Yes. Beets naturally contain nitrates. Research suggests dietary nitrates from vegetables can offer health benefits.

How do you store beet chips?

Store in an airtight container or resealable bag for up to one to two weeks. If they soften, reheat briefly in the air fryer to restore crispness.

Equipment

  • Air Fryer
  • Hand-held mandoline
  • Cut-resistant kitchen gloves (recommended)

Ingredients

  • 1 Beet Washed and scrubbed well
  • 1/4 teaspoon Olive oil Extra virgin, optional
  • 1/4 teaspoon Salt Optional, to taste

Instructions

  • Trim one end of the beet and remove root strands. Wash and scrub thoroughly; a textured scrub cloth helps.
  • Slice the beet with a mandoline on the #2 setting (about 2.5 mm) for even, thin slices.
  • Lightly coat the air fryer basket with a high-heat oil (avocado oil or similar) to prevent sticking.
  • Arrange beet slices in a single layer in the air fryer basket.
  • Optional: lightly brush or mist slices with olive oil and sprinkle with a small amount of salt.
  • Air fry at 300°F (about 150°C) for 8 minutes. If needed, add 1–2 minutes until crisp.

Notes

Using a handheld mandolin on the #2 setting yields ~2.5 mm slices. Wear cut-resistant gloves when using the mandolin if you slice by hand.

No need to peel beets—cleaning is sufficient. Discard the small back end of the beet after slicing for safety.

Never use aerosol oil sprays in the air fryer. Use a refillable oil mister or a silicone basting brush to apply oil.

Different air fryer models may require small adjustments to time or temperature—test and adapt as needed.
