These Chewy Brown Sugar Blueberry Cookies are seriously good.

I made them after discovering a bag of dried blueberries in my pantry that I’d used for granola. They begged to be baked into cookies, and I’m so glad I listened.

A Few Cook’s Notes

Either light or dark brown sugar works well in this recipe—dark brown sugar will give a slightly deeper molasses flavor.

These Chewy Brown Sugar Blueberry Cookies are soft and chewy and loaded with dried blueberries. The rich, sweet flavor of the brown sugar makes these cookies irresistible!

Ingredients  

  • 2 cups all-purpose flour
  • 1 tsp. baking soda
  • 3/4 tsp. ground cinnamon
  • 1/2 tsp. salt
  • 3/4 cup unsalted butter, room temperature
  • 1 1/4 cups light brown sugar, firmly packed
  • 1 large egg, room temperature
  • 1 tsp. vanilla extract
  • 1 cup dried blueberries

Instructions 

  • In a medium bowl, whisk together the flour, baking soda, cinnamon, and salt. Set aside.
  • Preheat the oven to 350°F (175°C). Line two large baking sheets with parchment paper.
  • Beat the butter and brown sugar together until smooth and creamy. Add the egg and vanilla and beat until combined. Gradually stir in the flour mixture until just combined, then fold in the dried blueberries.
  • Using a 1 1/2-inch cookie scoop or spoon, drop dough onto the prepared sheets about 2 inches apart. Bake 11–13 minutes, until edges are set and centers are slightly soft. Cool on wire racks.

Notes
