Today I tried a fun challenge: create a tasty, uncomplicated recipe that uses only five steps. The result is this sausage and hashbrown breakfast casserole—easy to prepare, filling, and perfect for mornings when you need something satisfying without fuss.

Sausage Hashbrown Breakfast Casserole

This version uses chicken (or turkey) breakfast sausage and frozen shredded hash browns. I baked the mixture in four mini loaf pans to make individual portions, but you can use a single casserole dish or make a half batch if you prefer fewer servings.

Here’s the simple five-step process to make this breakfast casserole.

Step 1 – Cut

Chopped onions, garlic and breakfast sausage ready for the casserole.

Dice the breakfast sausage into roughly 1/2-inch pieces. Also chop the white onion and mince garlic if using.

Step 2 – Melt

Melting butter to mix with the hash browns and sausage.

Gently melt the butter—microwave or stovetop—so it’s ready to combine with the other ingredients.

Step 3 – Mix

Mixing sausage, vegetables and hash browns in a bowl.

In a large bowl, combine the diced sausage, diced onion, diced green bell pepper, hash browns, and melted butter. Season with salt and pepper and stir until evenly mixed. Reserve the cheese to add later.

Step 4 – Bake

Spoon the hash brown mixture into mini loaf pans and bake.

Spoon the mixture into four mini loaf pans (or into a greased casserole dish). Place them in a preheated 350°F oven and bake for 25 minutes.

Step 5 – Cheese

Add cheese to the casserole during the last 10 minutes of baking.

When there are 10 minutes left, remove the pans and top each portion with cheese. Return to the oven for the final 10 minutes, until cheese is melted and edges are golden. Let cool slightly, then serve warm.

Instructions

  • Preheat oven to 350°F.
