I’m often asked what my favorite part of this job is. It’s a hard question because the work changes constantly — something I love one week may frustrate me the next — but I think I finally have an answer.

There’s a real sense of magic when you confront something unfamiliar and discover you’re capable of more than you realized.
Of course, growth takes practice and patience — patience has never been my strongest suit. For example, when I first started, I never imagined I could write a blog, take food photos, or manage social media. Now those tasks are second nature; I’ve streamlined my workflow and can often finish projects quickly, except the inevitable post-vacation catch-up days.
Sometimes I deliberately push myself to learn new skills: GIFs, collages, pitching, designing proposals. Occasionally I take on bigger projects like creating and publishing an e-cookbook in seven weeks. Not a big deal, but still a challenge.
My latest experiment is video. I’ll be honest — I dislike it right now. I even filmed a short clip for this post, but it didn’t turn out well so I’m holding off on sharing it.
That said, each attempt gets better. I’ll learn lighting, editing, and how to create video content that’s both useful to you and a personal achievement. I’ll keep practicing until it’s worthwhile to share.
Until then, I’ll continue to challenge myself to do something that scares me every single day. I encourage you to try the same — it feels amazing when you push past your comfort zone.

Ingredients

- 3/4 cup smooth, unsweetened almond butter
- 1/2 cup coconut palm sugar
- 1 large egg
- 1/3 cup hemp seeds, plus more for sprinkling
- Optional: 1 tsp vanilla extract, 1/3 cup dairy-free chocolate chips, 1/4 tsp sea salt
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine almond butter, coconut palm sugar, and the egg.
- Stir in the hemp seeds until evenly distributed.
- If using, add vanilla, chocolate chips, and sea salt, and mix until combined.
- The dough should form a sticky ball that still holds together.
- Roll the dough into 12 small balls and place them on a parchment- or silicone-lined baking sheet.
- Flatten each cookie with a fork and sprinkle with extra hemp seeds.
- Bake for about 12 minutes, until the edges are set.
- Remove from the oven and let cool on the baking sheet for 10 minutes. Do not handle them right away, as they are fragile when hot.
- After 10 minutes, transfer the cookies to a wire rack to cool completely.
- Store in an airtight container at room temperature for several days.
