We started a Whole30 Facebook group filled with some fantastic people (you’re welcome to join), and one question we get a lot is: “What if I can’t do eggs?” An egg-free Whole30 cycle can be challenging, so we created a protein-packed, egg-free breakfast option. These Whole30 Sausage Patties make a quick breakfast or hearty snack—perfect for busy mornings. Make a batch, freeze them, and pull out a few the night before.

This year I’m doing Whole30 while pregnant and CrossFitting five days a week, so I focus on starchy, Whole30-compliant carbohydrates to keep my energy up.

For this recipe you might already have everything on hand. If not, check your pantry list to stock up on Whole30 staples. Ingredients for the patties:
- 2 tablespoons ghee or other cooking fat
- 1/2 cup onion, diced
- 1.5 teaspoons minced garlic
- 1 cup fresh spinach
- 1/2 cup shredded carrots
- 1 cooked sweet potato, mashed
- 1 pound ground pork
- 1/2 teaspoon dried sage
- 1/4 teaspoon Himalayan salt (or preferred salt)
- 1/4 teaspoon black pepper
Instructions:
- Preheat the oven to 350°F (175°C).
- Heat 1 tablespoon of ghee in a skillet over medium heat. Add the onion, garlic, and shredded carrots and sauté until the onions are translucent and the carrots begin to soften.
- Add the cooked sweet potato and spinach to the skillet. Mash the sweet potato into the mixture and stir until the spinach wilts. Remove from heat and let the mixture cool slightly.
- In a large bowl, combine the ground pork, dried sage, salt, and pepper. Add the cooled vegetable mixture and mix until evenly distributed.
- Form the meat mixture into patties about 1 inch thick.
- Heat the remaining tablespoon of ghee in the skillet. Fry the patties 2–4 minutes per side, until browned.
- Transfer the patties to a baking sheet and finish cooking in the preheated oven for about 7 minutes to ensure they are cooked through.
- Let cool slightly. These freeze well—portion into bags of three and thaw in the fridge overnight before reheating.

- 1/4 t Himalayan salt
- 1/4 t black pepper
Instructions
Preheat the oven to 350 degrees. Heat 1 tablespoon of ghee in a skillet. When hot, add onion, garlic, and carrots and cook until the onion is translucent and the carrots begin to soften. Add the cooked sweet potato and spinach, mashing the sweet potato in the skillet and stirring until the spinach wilts. In a bowl, combine the ground pork, sage, salt, and pepper. Add the vegetable mixture and form patties about 1 inch thick. Fry the patties in the skillet 2–4 minutes per side until browned. Transfer to a baking sheet and bake for 7 minutes to finish cooking.
