Thicker fillets like salmon or Chilean sea bass can also be used—just add a few extra minutes to the cooking time.

  • 2 fillets (6–8 ounces each) white fish (tilapia, barramundi, sole, or catfish)
  • 2 tablespoons mayonnaise

Lemon Dill Aioli

  • 1/2 cup mayonnaise
  • 2 tablespoons chopped fresh dill
  • Juice of 1 small lemon
  • 2 garlic cloves, minced

Instructions

Fish

  1. Preheat the oven to 375°F (190°C). Lightly brush a baking dish with olive oil.
  2. Place pistachios in a mini food processor and pulse until coarsely ground.
  3. Mix the ground pistachios with lemon zest and chopped parsley. Season with salt and pepper if needed.
  4. Arrange the fish fillets in the prepared baking dish and brush the top of each with mayonnaise.
  5. Press the pistachio mixture onto the mayonnaise-coated tops of the fillets.
  6. Bake for 12–15 minutes, or until the fish flakes easily with a fork; thicker fillets will need more time.

Lemon Dill Aioli

  1. Whisk together the mayonnaise, dill, lemon juice, and minced garlic in a small bowl. Adjust seasoning and serve alongside the baked fish.

Notes

Substitutions:

  • Use tilapia, sole, grouper, or catfish. Salmon, cod, or Chilean sea bass also work—allow extra baking time for thicker fillets.
  • Swap pistachios for pecans or walnuts if preferred.

Make ahead:

  • Assemble the fish up to one day ahead and refrigerate, then bake when ready to serve.
  • The aioli keeps in the refrigerator for 1–2 days.
