Comforting, spiced baked oatmeal bars finished with a white chocolate drizzle.
Ingredients
- ¾ cup butter, softened
- ¾ cup brown sugar
- 1 egg
- ⅓ cup molasses
- 1 teaspoon pure vanilla extract
- 1½ cups all-purpose flour
- ½ teaspoon salt
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- ¼ teaspoon ground ginger
- ¼ teaspoon ground cloves
- 2½ cups quick oats
- 1 cup raisins (or dried cranberries)
- ½ cup chopped pecans
- ½ cup white chocolate melting wafers
Instructions
- Preheat oven to 350°F. Line a 9×13-inch pan with foil and spray with nonstick spray.
- Beat the butter and brown sugar together until creamy.
- Add the egg, molasses, and vanilla; beat until combined.
- In a separate bowl, mix the flour, salt, cinnamon, nutmeg, ginger, cloves, and oats.
- Slowly add the dry mixture to the butter mixture and stir until combined.
- Gently fold in the raisins and pecans. Press the mixture evenly into the prepared pan. Bake 20–22 minutes.
- Remove from the oven and let cool completely, then cut into 14 bars.
- Melt the white chocolate wafers according to package directions.
- Spoon the melted white chocolate into a small bag, snip a corner, and drizzle over the bars. Let the chocolate set.
- Store the bars in a tightly sealed container.
