These bars combine toasted oats and a mixture of nuts and seeds with dried mango and sweetened coconut. The binding syrup—brown rice syrup blended with apricot jam and a touch of butter—creates a cohesive, chewy texture without relying on excessive processed ingredients. A hint of warm spices and a touch of cayenne add depth and a subtle kick that enhances the overall flavor without overwhelming the fruit and coconut. Ingredients

  • 2 1/4 cups old fashioned rolled oats
  • 1 cup sliced almonds
  • 3/4 cup pistachios
  • 1/2 cup raw sunflower seeds
  • 1/4 tsp cinnamon
  • 1/8 tsp nutmeg
  • 1/2 cup brown rice syrup
  • 1/3 cup apricot jam
  • 1/4 cup dark brown sugar
  • 2 tbsp unsalted butter
  • 1 tbsp vanilla bean paste
  • 1 tsp kosher salt
  • 1/2 cup dried mango, diced
  • 1/3 cup sweetened coconut shreds
  • Pinch cayenne

Instructions

Preheat the oven to 350°F (175°C).

Spread the rolled oats evenly on a baking sheet and toast for about 10 minutes, until they turn golden and give off a nutty aroma. Remove and set aside to cool slightly.

On a separate baking sheet, spread the sliced almonds, pistachios, and sunflower seeds. Toast them for 10–12 minutes, stirring once halfway through, until fragrant and lightly browned. Remove from the oven.

While the oats and nuts are toasting, combine the brown rice syrup, apricot jam, dark brown sugar, and butter in a small saucepan over medium heat. Cook and stir until the sugar dissolves and the mixture is smooth and well combined.

Remove the pan from heat, then stir in the vanilla bean paste, kosher salt, cinnamon, nutmeg, and a pinch of cayenne. Mix until evenly incorporated.

Reduce the oven temperature to 300°F (150°C).

In a large bowl, combine the toasted oats with the toasted nut and seed mixture. Add the diced dried mango and shredded coconut, mixing thoroughly so the fruit and coconut are evenly distributed.

Pour the warm syrup over the dry ingredients and stir until everything is evenly coated and sticky. Transfer the mixture to a prepared baking dish (lined with parchment paper or lightly greased) and press it down firmly and evenly with the back of a spatula or your hands to compact the mixture.

Bake at 300°F for 25 minutes. When done, remove the pan from the oven and place it on a wire rack to cool completely before cutting into bars. Cooling fully helps the bars set and makes for cleaner slices.

Store the finished granola bars in an airtight container at room temperature for up to one week. They also freeze well for longer storage—wrap portions individually and place in a sealed container or freezer bag.
