  • 3 Medium-Large Potatoesabout 470g (1lb)
  • 1 teaspoon Curry Powderuse hot, medium or mild to taste

  • 2 tablespoon Olive Oil

Instructions

  • Wash the potatoes. Cut each potato into eight wedges: halve, halve again, then halve each quarter.

  • In a large bowl or ziplock bag combine curry powder, crushed garlic, salt, pepper and olive oil. Mix to a smooth paste.

Oven Method – Fan 200°C/400°F – Preheated

  • Arrange wedges on a baking tray skin-side down with space between each wedge so they crisp evenly. Use two trays if necessary.

  • Bake for 35–40 minutes at 200°C/400°F fan. If skin-side down they usually don’t need turning.

Air fryer method – 200°C/400°F – Preheated

  • Place wedges in a single layer in the air fryer basket with space around them. Cook in batches if necessary.
