As a dietitian, I love Starbucks egg bites, but making a homemade version saves money and lets you control ingredients. This cottage cheese egg bake is inspired by the bacon and gruyere egg bites but is adjusted to boost protein and keep calories reasonable while delivering the same soft, satisfying texture.

Why you’ll love cottage cheese egg bake

  • Made with just five simple ingredients plus seasonings
  • Prep takes under 10 minutes before baking
  • Delivers similar flavors and texture to Starbucks but at home and for less
  • High in protein to help keep you full and support muscle maintenance
  • Perfect for meal prep and reheats easily

What makes this egg bake frittata healthy?

  • High in protein — about 22 grams per serving
  • Simple, wholesome ingredients: eggs, cottage cheese, and turkey bacon
  • No additives or stabilizers often found in store-bought versions

Does it taste like cottage cheese?

No. Once blended, the cottage cheese becomes silky and the final bake does not taste like cottage cheese. The texture is smooth and similar to sous vide egg bites, making this homemade version very enjoyable even if you don’t love cottage cheese on its own.

Ingredient notes and swaps

Here are the ingredients and easy swaps to customize the recipe:

  • Cooking spray: prevents sticking. You can use butter or olive oil instead.
  • Large eggs: whole eggs give protein, fat, and micronutrients.
  • Cottage cheese: 2% works well for protein and mouthfeel; use a different fat percentage if you prefer.
  • Salt, black pepper, and optional cayenne: cayenne adds a subtle kick but isn’t overpowering.
  • Sharp cheddar: a flavorful, easy-to-find option. Swap with gruyere to mimic Starbucks more closely.
  • Cooked turkey bacon: any turkey or chicken bacon works; crisp and chop for best texture. Pork bacon is an acceptable substitute.
  • Green onions: add color and a mild onion flavor. Chives work too, or omit if unavailable.

How to make a cottage cheese egg bake

1. Position an oven rack in the middle and preheat to 350°F (175°C).

2. Spray a 9×13-inch nonstick baking dish with cooking spray or grease with butter/olive oil.

3. In a large blender, combine eggs, cottage cheese, salt, black pepper, and cayenne (if using). Blend on high until completely smooth, about 20 seconds.

4. Pour the blended egg mixture into the prepared pan.

5. Evenly sprinkle shredded cheese, cooked turkey bacon, and sliced green onions over the top. Transfer carefully to the oven so the toppings don’t shift.

6. Bake 20–25 minutes, until eggs are set and edges are lightly golden. Let rest 10 minutes before slicing.

More mix-ins

Try adding any of these for extra flavor and nutrition:

  • Baby spinach or chopped kale
  • Thinly sliced red onion
  • Sliced olives or sundried tomatoes
  • Diced bell pepper or quartered cherry tomatoes
  • Feta cheese or a splash of hot sauce

How to make this a balanced meal

The egg bake provides protein and fat. To round out the meal, serve with a fiber-rich side such as berries, apple or pear slices, whole wheat toast or English muffin, oatmeal, bran muffin, or roasted (sweet) potatoes.

Storage

Meal prep: Portion into single-serving containers or freezer-safe bags.

Fridge: Store up to four days.

Freezer: Freeze for up to three months.

How to re-heat

Reheat in an air fryer or toaster oven at 350°F for 2–3 minutes, or microwave for 30–45 seconds until heated through.

Top tips

  • Blend until the cottage cheese is completely smooth to avoid lumps.
  • Add toppings right before baking so they don’t sink.
  • Use a reliable nonstick pan or grease generously to prevent sticking.
  • If slices stick, let the bake rest and use a flexible spatula to lift portions out.

Only have a small blender?

No problem — blend the cottage cheese with 1–2 eggs using a handheld blender, then whisk with the remaining eggs by hand.
