Banana Bread Energy Bites
These portable energy bites taste like banana bread thanks to banana, Medjool dates and walnuts. Naturally vegan, gluten-free, paleo, and free from refined sugar — a simple, wholesome snack.

Medjool dates
pitted -

toasted walnuts

unsweetened desiccated coconut -

coconut oil -

teaspoon
cinnamon -

teaspoon
maple syrup

More desiccated coconut
to roll (about ⅓ cup)
Instructions

In a food processor, add the banana and dates. Pulse until they form a smooth paste.

Add the toasted walnuts, desiccated coconut, coconut oil, cinnamon, maple syrup and a pinch of sea salt. Pulse until the mixture is well combined and thick. If it’s too soft to roll, chill in the fridge for about 30 minutes.

Place desiccated coconut in a small bowl. Using about a heaping tablespoon per bite, roll the mixture into balls between your hands, then roll each ball in the coconut to coat. Arrange on a parchment-lined tray. You should get about 16 bites.

Chill the bites in the freezer for 30 minutes or in the refrigerator for 1 hour before serving. Store in an airtight container in the fridge or freezer.
