- 1/2 cup vegan chocolate chips or chopped refined sugar–free chocolate
- 1/4 cup + 1 tbsp natural peanut butter
Instructions
- Place a large or mini silicone cup pan on a baking sheet for stability. Set aside.
- In a microwave-safe bowl, whisk together peanut butter and maple syrup.
- Heat in 20-second increments, stirring between each, until warm and fluid (about 1½–2½ minutes total). Alternatively, warm gently on the stovetop over medium-low heat.
- Fold the oats into the peanut butter mixture until fully combined.
- Using a small or medium cookie scoop, portion the mixture into each cup and press to flatten and smooth the tops.
- For the chocolate topping: melt chocolate chips with the additional peanut butter in 20-second microwave intervals, stirring until smooth, or use a double boiler.
- Pour or spoon the melted chocolate over each oat cup and tap the pan to level the chocolate.
- Chill in the freezer for 15–25 minutes until firm. Remove from the pan and enjoy.
Notes
- Storage: Store in an airtight container in the refrigerator or at room temperature for up to one month. They will firm up more after the first day if left at room temperature.
- Freezing: Freeze in a freezer-safe container or bags for 1–2 months. Thaw 5–15 minutes at room temperature before eating.
