
Fresh Summertime Zucchini Caprese
A bright taste of summer — and yes, zucchini is delicious raw in this salad.
Serves 2.
Ingredients:
- 1.5 cups fresh medium red tomatoes on the vine, quartered
- 1 cup yellow cherry tomatoes, halved
- 2 medium fresh zucchini, shaved into ribbons (use a mandolin or spiralizer)
- 1 cup mozzarella pearls, drained
- 2 tablespoons extra virgin olive oil
- 2 tablespoons high-quality balsamic vinegar
- 1/2 teaspoon dried basil, or a handful of fresh basil leaves, chopped
- Sea salt and freshly cracked black pepper, to taste

Instructions:
On a serving platter, arrange the quartered red tomatoes, halved yellow cherry tomatoes, zucchini ribbons and mozzarella pearls. Sprinkle the dried basil (or chopped fresh basil), sea salt and freshly cracked black pepper evenly over the salad.
Drizzle the extra virgin olive oil and balsamic vinegar on top, then toss gently so the flavors combine without bruising the vegetables.
Serve immediately and enjoy.
