I’ve been obsessed with summer fruits lately, buying more each weekend and turning them into quick dishes all week. This summer fruit salad was born from an overfull refrigerator — a common food-blogger problem: too much fresh food and not enough shelf space. If you keep finding extra produce in the back of your fridge, try making a large fruit salad like this one to use it up.

For this batch I used blueberries, blackberries, cantaloupe, peaches, plums and mango. I later discovered pineapple and bananas hiding in the fridge — they would have been lovely here too. The beauty of this recipe is its flexibility: swap or add strawberries, raspberries, grapes, cherries or any fruit you enjoy.


This salad is perfect for fruit lovers and takes only a few minutes to assemble. If you want to get fancy and use a melon baller, it will take a bit longer — I recently bought one and had fun practicing melon balls, though I still need more practice for perfect spheres. To prepare, simply toss the chopped fruit in a large bowl, whisk the honey-lime dressing, pour it over the fruit and toss gently to coat. Chill briefly if you prefer the salad cold — it’s delicious either chilled or at room temperature.

Summer Fruit Salad with Honey Lime Dressing
Ingredients
- 1/2 cantaloupe, diced or scooped into melon balls
- 1 mango, diced
- 2 peaches, diced
- 8-10 cherries, pitted and halved
- 3-4 plums, diced
- 2 cups berries (I used blueberries and blackberries)
Dressing
- 3 tablespoons honey
- 2 tablespoons lime juice
- pinch pepper
- mint leaves, for garnish
Instructions

Toss all the prepared fruit together in a large bowl.

In a small bowl whisk together the honey, lime juice and a pinch of pepper until smooth.

Pour the dressing over the fruit and toss gently to combine.
