Hello, lovely bakers! I have a sweet tip to share: a pantry ingredient that can transform many of your baked goods. Whether you’re a novice or a seasoned baker, Instant Clearjel is a useful tool that delivers consistent results in cakes, cookies, pies, and frostings.
Instant Clearjel goes by several names—Clear Jel, Clearjel, or Clear Gel—but they all refer to the same product. I usually call it Clearjel and use the instant variety in the majority of my recipes because it’s quick and reliable.
Baking is delicious science, and knowing your ingredients helps you get repeatable, excellent outcomes. Instant Clearjel is simply modified cornstarch (sometimes listed as “food starch-modified”) formulated to thicken instantly when mixed with a liquid such as water, milk, or juice.

So, what exactly is Instant Clearjel?
There are two main forms of Clearjel: Instant and Cooktype (also called Original). I recommend and use the instant type in most recipes because it hydrates immediately and performs consistently in baked goods. Cooktype requires heat and will not substitute well in recipes that call for Instant Clearjel.
Instant Clearjel contains a single ingredient: modified cornstarch. To avoid lumps, always blend Instant Clearjel with the dry ingredients before adding the wet ingredients. Doing this prevents clumping and ensures a smooth, evenly thickened final texture.
This thickener has countless uses in baking. It’s especially handy for stabilizing fillings, keeping cakes moist, and producing chewy cookies.
Where to Buy Instant Clearjel
Instant Clearjel isn’t usually found on the average grocery shelf, but it’s available through specialty and online retailers. When you shop, confirm the product is labeled “instant” and that the only ingredient listed is modified cornstarch or food starch-modified.
I prefer packaging with a resealable bag or container so the product stays fresh long-term.

If you can’t find it locally, check specialty stores or online shops. Some local markets and specialty suppliers sometimes stock Instant Clearjel—ask around in farmers’ markets or specialty baking stores.
Is there an Instant Clearjel Shortage?
There were times when instant clearjel became harder to find, but availability has improved. If you can’t source it, there are workable substitutes I’ve used successfully in the bakery for years.
- Instant Pudding Mix — Works well in cakes, cupcakes, and some cookie recipes. Pudding mix contains modified cornstarch, but it is not a 1:1 substitute so follow recipe guidance when offered.
- EZ Gel — Useful in stabilized whipped cream preparations.
- Cornstarch — Best for cooked compotes and pie fillings; it requires heat to thicken and yields a cloudier finish than Clearjel.
- Omit it in some frostings if you don’t need the extra thickening; add powdered sugar slowly instead.
When a recipe lists multiple options, I’ve tested them and confirmed that either will work, though Instant Clearjel is my preferred choice for certain recipes like cinnamon rolls, specific cookies, and pies.
Five Reasons You Need it in Your Pantry

1. Perfect pie fillings.
Instant Clearjel gives fruit and cream pie fillings a glossy, stable finish. It swells with liquid to create a thick, spoonable texture that holds up in the fridge, freezer, or oven—no weeping or thinning over time.
2. Moist cakes and chewy cookies—every time.
In cake batters, Instant Clearjel helps retain moisture, giving a tender, dense crumb that stays moist for days. In cookies it helps lock moisture into the center so you get that desirable chewy bite.
3. Fantastic frostings.
Because Instant Clearjel thickens without adding sweetness, it’s ideal for fruit-flavored frostings. You can add purees for flavor without ending up with a runny frosting, producing creamy, spreadable buttercreams that aren’t overly sweet.
4. Freeze with confidence.
Baked goods and fillings made with Instant Clearjel freeze and thaw well. The modified starch preserves texture, so cakes, pies, and frostings remain stable after freezing.
5. Long shelf life
Instant Clearjel is shelf-stable and can sit in your pantry for a year or more if stored in a sealed container, making it a convenient, low-maintenance ingredient.
Substitutes for Instant Clearjel in Baking
If you don’t have Instant Clearjel, these alternatives can work depending on the application. Expect slight differences in texture and appearance.
EZ Gel — Use about twice the amount of EZ Gel for stabilized whipped cream recipes when substituting for Instant Clearjel.
For compotes and pie fillings: Substitute equal parts cornstarch, but cook the filling on the stove until it thickens. Cornstarch needs heat and gives a less glossy, slightly cloudier finish.
In cake batter and cookies: Instant pudding mix (with modified cornstarch) can substitute in equal measure or up to 1.5x by volume—adjust as a recipe directs. Match the pudding flavor to your recipe (vanilla, chocolate, or lemon) and avoid flavors that will taste artificial in the finished baked good. Note cakes may bake a bit longer and have a slightly different crumb; cookies may need chilling before baking and might be less chewy.
In frostings: I don’t recommend pudding mix as a frosting thickener. If you must omit Instant Clearjel in buttercream, add powdered sugar gradually until you reach the desired consistency.
