Baked Chicken Parmesan offers a quick and satisfying weeknight meal: lightly breaded chicken baked to a golden crisp, topped with marinara and melted mozzarella. It’s an easy way to serve a comforting, homemade dinner that still feels a bit special.
Ingredients
- 2 boneless chicken breasts (about 1 lb.)
- Salt and freshly ground black pepper, to taste
- Garlic powder, to taste
- ¼ cup flour
- 1 large egg, slightly beaten
- ¾ cup panko bread crumbs
- 1/3 cup grated Parmesan
- 1 Tbsp dry Italian seasoning
- 4–5 Tbsp marinara sauce
- 6 Tbsp shredded mozzarella cheese
Instructions
- Preheat the oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray or olive oil and set aside.
- Slice each chicken breast horizontally to make thinner cutlets. Season both sides with salt, pepper, and garlic powder.
- Set up three shallow dishes: flour in the first, beaten egg in the second, and a mixture of panko, grated Parmesan, and Italian seasoning in the third.
- Coat each chicken piece by dredging in flour, dipping in egg, then pressing into the breadcrumb mixture so it’s well coated. Transfer to the prepared baking sheet.
- Lightly spray the tops of the coated chicken with cooking spray. Bake in the preheated oven for 25–30 minutes, until the chicken is cooked through and golden brown.
- Remove the baking sheet from the oven. Spoon about 1 tablespoon of marinara onto each piece of chicken, then sprinkle with shredded mozzarella. Return to the oven for 2–3 minutes, just until the cheese melts.
- Serve hot over pasta, with a side salad, or your favorite vegetables.
