Description

Baked Chicken Parmesan offers a quick and satisfying weeknight meal: lightly breaded chicken baked to a golden crisp, topped with marinara and melted mozzarella. It’s an easy way to serve a comforting, homemade dinner that still feels a bit special.


Ingredients

  • 2 boneless chicken breasts (about 1 lb.)
  • Salt and freshly ground black pepper, to taste
  • Garlic powder, to taste
  • ¼ cup flour
  • 1 large egg, slightly beaten
  • ¾ cup panko bread crumbs
  • 1/3 cup grated Parmesan
  • 1 Tbsp dry Italian seasoning
  • 4–5 Tbsp marinara sauce
  • 6 Tbsp shredded mozzarella cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Lightly grease a baking sheet with cooking spray or olive oil and set aside.
  2. Slice each chicken breast horizontally to make thinner cutlets. Season both sides with salt, pepper, and garlic powder.
  3. Set up three shallow dishes: flour in the first, beaten egg in the second, and a mixture of panko, grated Parmesan, and Italian seasoning in the third.
  4. Coat each chicken piece by dredging in flour, dipping in egg, then pressing into the breadcrumb mixture so it’s well coated. Transfer to the prepared baking sheet.
  5. Lightly spray the tops of the coated chicken with cooking spray. Bake in the preheated oven for 25–30 minutes, until the chicken is cooked through and golden brown.
  6. Remove the baking sheet from the oven. Spoon about 1 tablespoon of marinara onto each piece of chicken, then sprinkle with shredded mozzarella. Return to the oven for 2–3 minutes, just until the cheese melts.
  7. Serve hot over pasta, with a side salad, or your favorite vegetables.
