Ingredients

  • 1/2 cup butter (1 stick)
  • 1 cup white sugar
  • 1 cup packed light brown sugar
  • 1/2 cup milk
  • 1/4 cup all-purpose flour, whisked or sifted to remove any clumps
  • 1 egg
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1 unbaked 9-inch pie shell

Instructions

  • Preheat oven to 400°F (200°C).
  • In a medium heavy‑bottomed pan, heat the butter, white sugar, brown sugar, milk, and flour over medium heat. Stir constantly until the butter melts and the sugars dissolve. Remove from heat and transfer the mixture to a large bowl. Let cool about 15 minutes.
  • In a small bowl, whisk together the whole egg, egg yolks, vanilla, salt, and nutmeg.
  • Temper the eggs by slowly whisking about 1 cup of the warm butter mixture into the egg mixture to prevent curdling. Then whisk the tempered egg mixture back into the remaining butter mixture until smooth.
  • Pour the filling into the unbaked pie shell.
  • Bake for 10 minutes at 400°F, then reduce the oven temperature to 325°F (165°C) and bake for an additional 35 minutes, or until set.

Notes

Allow the pie to cool completely before slicing. For best texture, refrigerate overnight.
